Remuer et laissez mac\u00e9rer au frais pendant la nuit.<\/li>\n<li>Coupez les tranches d&rsquo;ananas en petits morceaux et r\u00e9servez-les.&nbsp;<\/li>\n<li>Epluchez un morceau de gingembre, \u00e9mincez-le en fines lamelles de 4 cm de longueur. Blanchissez-les en les mettant dans une petite passoire que vous plongez dans une casserole d&rsquo;eau bouillante pendant 30 secondes. Les \u00e9goutter, \u00f4ter l&rsquo;eau de la casserole et recommencez 2 autres fois l&rsquo;op\u00e9ration.<\/li>\n<li>Dans une cocotte, fa\u00eetes fondre le beurre et fa\u00eetes suer l&rsquo;oignon, l&rsquo;\u00e9chalote et la gousse d&rsquo;ail, que vous aurez pr\u00e9alablement finement hach\u00e9s. Sur un feu plus fort, ajoutez les morceaux d&rsquo;ananas, remuez \u00e0 l&rsquo;aide d&rsquo;une spatule puis ajoutez les lamelles de gingembre blanchies. Salez et poivrez, incorporez la pinc\u00e9e de curry, 2 cuil. \u00e0 caf\u00e9 de miel, et le piment oiseau hach\u00e9. Ajoutez 1 dl de bouillon de volaille et laissez mijoter \u00e0 couvert sur feu doux 10 minutes.<\/li>\n<li>D\u00e9coupez le filet mignon en m\u00e9daillons de 3 cm environ. Salez-les.<\/li>\n<li>Dans une po\u00eale, versez l&rsquo;huile d&rsquo;arachide, ajoutez 1 cuil. \u00e0 soupe de sucre de canne puis laissez caram\u00e9liser l\u00e9g\u00e8rement. Ajoutez les m\u00e9daillons et laissez cuire 5 \u00e0 10 minutes en les retournant r\u00e9guli\u00e8rement. Salez et d\u00e9barrasser sur une grille. <\/li>\n<li>Versez le vinaigre aux fruits de la passion dans la po\u00eale et d\u00e9glacez quelques secondes puis ajoutez 2 cuil. \u00e0 caf\u00e9 de miel en remuant \u00e0 l&rsquo;aide d&rsquo;une spatule pour faire r\u00e9duire la sauce jusqu&rsquo;\u00e0 obtention d&rsquo;une consistance sirupeuse.
